Job summary

Uluwatu Estate is seeking a Senior Sous Chef to lead and supervise food preparation and presentation across all outlets and banquets, stepping in for the Executive Chef when needed. You will oversee mise en place, service, and collaboration on seasonal menus with a focus on VIP requests.

The role requires a Diploma in Hotel Management or Culinary Arts with at least 2 years in a 5-star/hospitality setting, strong Indonesian and English skills, and a leadership-driven, detail-oriented approach.

Qualifications

• Diploma (D3) in Hotel Management or Culinary Arts
• Minimum 2 years as Sous Chef or Senior Sous Chef in a 5-star hotel, luxury resort or fine dining
• Master international and modern Indonesian cooking techniques
• Strong food cost management, portion control and kitchen inventory management
• Fluent in Indonesian and good English (spoken and written)
• Leadership mindset suitable for high-pressure environments
• Willing to work weekends and national holidays

Responsibilities

• Lead and supervise food preparation and presentation in all outlets and events/banquets to ensure highest quality standards
• Act on behalf of the Executive Chef in their absence to make operational decisions
• Control the workflow in the kitchen from mise en place to service
• Ensure all kitchen equipment functions properly and coordinate with maintenance
• Collaborate with the Executive Chef to create seasonal and VIP menus
• Develop standard recipes and presentation photos for consistency
• Manage work schedules, task distribution and evaluate staff performance
• Provide regular training, coaching and mentoring to the team
• Manage raw material inventory and place orders to minimize waste
• Enforce hygiene and sanitation standards in all kitchen areas
