Shangri-La Hotel, Surabaya is seeking an Executive Chinese Chef to lead the Chinese & Banquet Culinary operation. You will oversee menu development, theme events, and cost control while mentoring Shang Palace & Banquet teams.

Qualifications

Experience in luxury chain hotels preferred.
Proficiency in English and Mandarin, both written and spoken.
Ability to communicate in Bahasa Indonesia.

Strong planning, organizing and problem-solving skills.

Responsibilities

Lead the Chinese & Banquet Culinary operation team.
Ensure delivery of the highest standard of food quality and manage food cost in a consistent manner.
Be responsible for the menu planning and development, theme events and regular reviews of existing menu cycle.
Train / coach and provide leadership to Shang Palace & Banquet Culinary team.
Maximise profitability of the outlet.
Control both in food cost and quality.
Preserved high standard of Food Safety Compliance as per company standard.
Lead the team to new height, strive for Michelin star recognition.
