Job summary

Shangri-La Hotel, Surabaya is seeking an Executive Chinese Chef to lead the Chinese & Banquet Culinary operation. You will oversee menu development, theme events, and cost control while mentoring Shang Palace & Banquet teams.

The role calls for strong leadership, fluency in English and Mandarin, and a passion for delivering exceptional luxury dining experiences. The ideal candidate combines culinary creativity with strategic planning, guest-centric service, and a drive to elevate the outlet

Qualifications

• Experience in luxury chain hotels preferred.
• Proficiency in English and Mandarin, both written and spoken.
• Ability to communicate in Bahasa Indonesia.
• Passion for food & beverage and commitment to high quality.
• Creative, innovative, and detail oriented.
• Strong planning, organizing and problem-solving skills.
• Friendly, helpful, and trustworthy leadership.

Responsibilities

• Lead the Chinese & Banquet Culinary operation team.
• Ensure delivery of the highest standard of food quality and manage food cost in a consistent manner.
• Be responsible for the menu planning and development, theme events and regular reviews of existing menu cycle.
• Train / coach and provide leadership to Shang Palace & Banquet Culinary team.
• Maximise profitability of the outlet.
• Control both in food cost and quality.
• Preserved high standard of Food Safety Compliance as per company standard.
• Lead the team to new height, strive for Michelin star recognition.
