We are seeking a highly skilled and passionate Executive Chef to lead our culinary team. You will oversee all kitchen operations, menu engineering, staff management, and food quality control while ensuring an exceptional dining experience across diverse culinary styles.
Key responsibilities
Design, implement, and update innovative menus featuring a fusion of authentic Nusantara flavors, classic/modern Western dishes, and elegant canapés
Ensure all dishes maintain the highest standards of taste, presentation, and authenticity
Oversee daily operations of the hot kitchen, cold kitchen, and pastry sections
Manage inventory, portion control, and food wastage to optimize food cost percentages
Establish and maintain strong relationships with vendors to source high-quality local or imported ingredients
Recruit, train, mentor, and supervise kitchen staff, fostering a positive and collaborative work environment
Conduct regular cooking workshops and briefings to maintain consistency in recipe execution
Schedule kitchen shifts and manage labor costs effectively
Enforce strict compliance with local health regulations, food safety standards, and HACCP guidelines
About you
Minimum of 3-5 years of culinary experience, with at least 3 years in a leadership role (Executive Chef or Head Chef) within 5-star hotels, luxury resorts, or high-end fine dining restaurants
Mastery of Western cooking techniques (e.g., French, Italian) and deep knowledge of authentic Indonesian regional cuisines (Nusantara)
Strong understanding of food cost control, budgeting, menu engineering, and inventory software
Proven ability to manage, motivate, and lead a large, diverse kitchen team under high‑pressure environments
A degree or diploma in Culinary Arts, Hospitality Management, or a related field is highly preferred
