The Jittlada Royal Thai Cuisine in Indonesia is seeking an experienced Teppanyaki Cook to prepare and cook a variety of teppanyaki dishes using traditional techniques on the flat iron griddle.
You will maintain excellent knife skills, ensure top-quality presentation, and interact professionally with guests to deliver an engaging dining experience. This role requires strong knowledge of Japanese cuisine and the ability to work with a busy kitchen team.
Prepare and cook a variety of teppanyaki dishes including meats, seafood, vegetables and noodles using traditional teppanyaki techniques on the flat iron griddle
Maintain exceptional knife skills and food preparation standards, ensuring all ingredients are properly cut, organised and ready for service
Deliver an engaging and entertaining dining experience by executing precise cooking techniques whilst interacting professionally with guests
Monitor food quality, temperature and presentation to ensure all dishes meet our established standards and specifications
Maintain strict hygiene and food safety protocols throughout the cooking process and workstation
Collaborate effectively with front-of-house staff and other kitchen team members to ensure smooth service flow
Manage inventory of teppanyaki ingredients and equipment, reporting any shortages or maintenance issues promptly
Train and mentor junior kitchen staff on teppanyaki techniques and best practices when required
Adhere to all health, safety and sanitation regulations within the kitchen environment
Proven experience as a Cook Teppanyaki or similar Japanese cooking specialisation in a professional restaurant setting
Advanced knife skills and proficiency with teppanyaki cooking techniques and equipment
Strong understanding of Japanese cuisine, ingredient quality and authentic cooking methods
Excellent physical stamina to work standing for extended periods in a busy kitchen environment
Exceptional attention to detail and commitment to food presentation and quality standards
Strong interpersonal and communication skills with the ability to engage guests and work collaboratively with team members
Knowledge of food safety, hygiene standards and health regulations
Flexibility to work rotating shifts, including evenings, weekends and public holidays
Culinary qualification or formal training in Japanese cuisine is highly desirable
Fluency in English or Indonesian is preferred for effective team communication
