Job summary

Bali Jobs Recruitment represents a boutique hospitality group in Bingin, Uluwatu, Bali, seeking a Restaurant Manager to lead a high-volume, clifftop villa and dining concept. The role oversees the restaurant, garden, lawn and bars, guiding service and ensuring an exceptional guest experience.

You will manage day-to-day operations, partner with the Head Chef, control costs, staff rosters, and ensure service standards across venues.

Qualifications

• Minimum 3 years in a senior operational leadership role within luxury properties, or multi-faceted venues.
• Demonstrated ability to lead service as host and coordinate with Head Chef and other departments.
• MOD (Manager on Duty) experience including cash handling, float verifications and escalations.

Responsibilities

• Venue Leadership: lead the floor on service, chair briefings, coordinate with service, kitchen and support departments.
• Guest Experience: protect service culture; handle escalated complaints and VIPs; monitor reviews and service times.
• Sales, Cost & Stock Control: review daily sales close, authorize discounts and manage stock levels.
• People Management: approve rosters, manage leave/overtime, conduct performance reviews and training.
• Reporting & Escalation: send daily reports to Director and escalate matters promptly.
• MOD duties: verify cash float, manage out-of-hours access, document differences during shifts.
• MOD roster: prepare MOD roster with senior venue managers and Head Chef as back-up.
• Coordination: liaise with Engineering, Security, Housekeeping for guest matters.
• Purchases: approve non-food lists pre-2pm; CFO approval required for above-budget items.
• Marketing & Community: support events, DJs and maintain stakeholder relations.
