Job summary

Mercure Serpong Alam Sutera is seeking a skilled Sous Chef to support the Executive Chef in a fast-paced hotel kitchen. You will oversee daily operations, ensure high hygiene, safety, and food quality while assisting with menu execution and IMS compliance.

The ideal candidate has 2–3 years of Sous Chef experience in Chinese cuisine, a culinary Diploma, and knowledge of HACCP. Strong leadership, discipline, and teamwork are essential for delivering consistent, guest‑focused dining experiences.

Qualifications

• Diploma or certificate in culinary arts preferred.
• Minimum 2–3 years as Sous Chef in Chinese restaurant or hotel.
• Knowledge of authentic Chinese cuisine, wok, dim sum techniques.
• HACCP or Food Safety Certification preferred.

Responsibilities

• Oversee daily kitchen operations and service execution.
• Ensure all food is prepared, cooked and plated to standard.
• Supervise mise en place, cooking processes and plating quality.
