Job summary

Mandarin Oriental, Hong Kong is seeking a Junior Sous Chef–Chocolate to join our Pastry Kitchen team in Hong Kong. You will assist the Executive Pastry Chef with daily operations and production of all chocolate creations, reporting to the Executive Pastry Chef.

We expect 5 years of relevant experience in a similar role with fine dining, and you should be self-motivated, responsible, independent and able to work under pressure.

Qualifications

• 5 years relevant experience in similar capacity with Fine Dining experience.
• Self-motivated and responsible.
• Independent and able to work under pressure.

Responsibilities

• Maintain high standards of appearance and personal hygiene.
• Adhere to health and safety, sanitation, fire procedures and HACCP.
• Maintain cleanliness and sanitation in culinary work areas and stations after service.
• Follow procedure and ensure safe use of equipment; instruct staff accordingly.
• Adhere to standards of food handling, production, preparation, portioning and presentation.
