Mandarin Oriental, Hong Kong is seeking a Director of Wine to lead the property's wine program across dining outlets, elevating guest experiences with curated lists and exemplary service in a luxury hospitality environment. With a distinguished wine background, you will drive profitability and guest engagement through tastings, events and meticulous cellar operations.

Competenze

• Degree holder in Hospitality Management, Food & Beverage Management or related discipline.
• Minimum 10 years’ relevant experience in luxury hospitality, with 5 years in leadership.
• Recognised wine qualification such as WSET Diploma or CMS.
• Extensive knowledge of international wines and fine wine service.
• Experience curating sophisticated wine programmes in luxury hotels or acclaimed restaurants.
• Strong commercial acumen in purchasing, budgeting, inventory management and revenue optimization.
• Proven ability to create exceptional guest experiences through wine pairing, tastings and events.
• Fluent in English; Cantonese/Putonghua knowledge is an advantage.
• Familiarity with quality standards and regulatory compliance.

• Lead and oversee the wine program across all dining outlets with exceptional selection and service.
• Manage daily wine operations for the venue, including cellar management and inventory control.
• Curate, develop and enhance wine lists across the portfolio for profitability.
• Drive wine revenue through strategic purchasing, supplier partnerships and cost control.
• Maintain inventory standards, stock levels and storage conditions.
• Lead and develop the sommelier and wine service teams.
• Collaborate with culinary leadership to create pairing experiences and events.
• Build relationships with suppliers and wineries for exclusive offerings.
• Deliver personalized wine recommendations and guest interactions.
• Oversee wine budgets, reporting and related administrative functions.
• Contribute to F&B leadership and act as Manager on Duty when required.
• Champion brand values and ensure governance compliance.
