Job summary

Mandarin Oriental, Hong Kong is seeking a Director of Wine to lead the hotel’s wine program across dining outlets, ensuring exceptional wine selection, service, and guest experiences aligned with luxury hospitality excellence.

The ideal candidate has 10+ years in luxury hospitality or wine operations, including 5+ years in leadership, with a recognised wine qualification and deep knowledge of international wines.

Responsibilities

• Lead and oversee the wine program across all dining outlets.
• Manage daily wine operations for Mandarin Grill & Bar.
• Curate wine lists across the hotel portfolio.
• Drive wine revenue through strategic purchasing and partnerships.
• Develop sommelier and wine service teams.
• Partner with culinary leadership for wine pairing experiences.
• Oversee wine-related budgets, inventory, and admin functions.
• Act as Manager on Duty when required.
