Job summary

Mandarin Oriental, Hong Kong seeks a Director of Operations, Terrace Boulud, to lead the restaurant as a standalone business within the group’s Food & Beverage division. You will drive revenue growth, profitability and guest loyalty, operating with the CEO mindset to outperform in a luxury market.

Based in Hong Kong, you will shape partnerships, events and guest engagement while upholding world-class standards across service, culinary and reservations.

Qualifications

• As a Director of Operations in luxury hospitality, 10+ years of relevant experience is required.
• Minimum 5 years in a managerial role with a proven revenue and profitability track record.
• Strong budgeting, forecasting, financial management and strategic planning skills.
• Experience developing partnerships, events, brand activations and guest engagement initiatives.
• Deep knowledge of luxury dining operations, guest experience management and service excellence.
• Inspirational leadership with ability to build and retain high-performing teams.
• Excellent stakeholder management and communication skills.
• Strong analytical and problem-solving mindset with an entrepreneurial edge.
• Advanced English; Cantonese/Putonghua is an advantage.
• Solid understanding of quality standards, Forbes, LQE, HACCP, health and safety compliance.

• Lead Terrace Boulud as a standalone business, driving revenue growth and long-term success.
• Develop and execute strategic plans aligned to budgets and commercial goals.
• Strengthen market position through partnerships, activations and guest engagement.
• Maintain world-class hospitality standards and VIP relationships.
• Oversee operations across service, culinary, beverage and reservations.
• Drive efficiency and continuous improvement while preserving luxury service.
• Manage budgeting, cost control, profitability and business performance reporting.
• Build and inspire a high-performing team through leadership and coaching.
• Create signature dining experiences and strategic collaborations for brand visibility.
• Ensure compliance with food safety, health & safety, licensing and standards.
