We are a long-established, family‑run restaurant in the heart of Brighton and are currently looking for an experienced Sous Chef to join our team.
We’d really like to hear from you if you share our passion for using fresh ingredients, and preparing authentic dishes from scratch, including fish and seafood which we buy daily.
You must be hardworking, punctual and have experience of working in a fast‑paced and busy environment. You will also be required to fully support a small team of chefs and kitchen assistants.
Working closely with your team, you’ll ensure Health/Food Safety practices are followed and daily records are maintained and kept up‑to‑date.
Aside from offering a great hourly rate you’ll receive a share of service charge every month, free meals on shift and discounted food and drinks when you dine with friends and family.
To ensure a good work‑life balance, there’s also flexibility to work set shifts if this is preferred.

Al Duomo was first opened in 1979 by Dino Azzaroni and a team of passionate Italian companions, featuring Brighton’s first wood‑fired pizza oven. Over the past 42 years the restaurant has become a backdrop for family meals, weddings, Friday night festivities and quiet Sunday lunches, spanning five floors with original interior walls, arched windows and a spacious outdoor terrace. The site is an important landmark within the historic Pavilion Buildings parade.
Initially owned by the Azzaroni family, Al Duomo is now operated by the family‑run Italian food manufacturing and distribution company Carnevale, which has partnered with the restaurant for the past 30 years. The current manager is Sardinian chef Ercole Cappai, former owner of The Latin In The Laine. Recent renovations have updated the interior and introduced a new patisserie kitchen, expanding the authentic Italian menu to include desserts, gelato, coppe and fresh pasta, all made on‑site.
