Estelle Manor is a rural retreat in Oxfordshire offering a fine dining Chinese restaurant. We are recruiting an experienced Wok Chef to help lead the kitchen, oversee budget and operations for the Billiard Room, and support the Head Chef in upholding Estelle Manor standards.

The role includes managing food quality, safety compliance, and stepping in for the Head Chef when needed. You will be empowered to make decisions to maintain exceptional guest experiences.

• Experience in a sous chef or chef de cuisine role in a high-end kitchen.
• Ability to lead and manage kitchen operations and ensure safety standards.
• Strong initiative to solve issues and improve kitchen performance.

Responsibilities

• Lead and oversee kitchen operations for the Billiard Room as required.
• Assist Head Chef in maintaining food quality, standards and health & safety.
• Stand in for Head Chef when absent and make managerial decisions in operations.

Who are we?

Estelle Manor is a rural retreat set on an 85-acre estate in Oxfordshire. The manor has four restaurants, an extraordinary 3,000 sq metre Roman-inspired spa- Eynsham Baths, 108 bedrooms and a gym with class studios and padel courts. Plus, there’s a kids’ club for the little ones and a workspace.

We are looking for an experienced Wok Chef to help lead our Fine Dining Chinese Restaurant.

The on target earning potential for this role is £45,376 per annum per annum based on a 45 hour contract - comprising a base salary of £38,376, plus a qualified estimate of £7,000 in gratuities and service charge*.

Here’s a bit more detail on what we see you doing in this role:

As the Wok Chef your primary function is to assist in providing leadership, management, oversee budget and operations for the Billiard Room at Estelle Manor. You will assist the Head Chef in managing all food related standards, health and safety ensuring the guests and members experience is always in line with Estelle Manor standards. You will stand in for the Head Chef in his absence and will be empowered to make managerial decisions within the kitchen’s operations and ultimately be responsible for the quality of all items leaving the kitchen.

• Someone who has held a sous chef or chef de cuisine role with strong culinary techniques within highly regarded kitchens.
• Ability to perform under pressure and deliver results to deadlines.
• Someone who takes responsibility and initiative to explore issues and to generate new ideas with creative thinking.
• Someone who has worked in a rotational role around the kitchen and has experience in handling a multi-faceted operation.

• Gratuities (tips) are paid on a pro-rata basis regardless of your role.
