Job summary

Estelle is seeking a General Manager to lead The Billiards front-of-house team in Oxfordshire. You will provide leadership for the restaurant, ensure seamless daily operations, and work with senior F&B leadership to realise the venue's vision and strategy.

Key requirements include senior restaurant management experience in luxury hospitality, superb communication, team leadership, and a track record of achieving service and financial targets while delivering outstanding guest experiences.

Who are we?

Estelle Manor is a rural retreat set on an 85-acre estate in Oxfordshire. The manor has four restaurants, an extraordinary 3,000 sq metre Roman-inspired spa- Eynsham Baths, 108 bedrooms and a gym with class studios and padel courts. Plus, there’s a kids’ club for the little ones and a workspace.

We are looking for an inspiring General Manager to lead our Billiards front of house restaurant team.

Here's a bit more detail on what we see you doing in this role:

As the General Manager of The Billiards, you will provide leadership and management to the front of house team, ensuring the smooth day-to-day running of the restaurant and consistently delivering an exceptional experience for our members and guests. You will lead from the front, setting the tone for service and culture while working closely with the F&B Senior Leadership team to deliver the vision and strategy for the restaurant.

You will have overall responsibility for the restaurant's operations, team performance, financial targets, service standards and guest experience. You will also oversee staff management, training and development, equipment and maintenance, sales reporting and strong communication across all levels.

About The Billiards:

The Billiards offers a menu of traditional Chinese dishes, with a particular focus on dim sum and showstopping favourites including char siu belly pork and an irresistible whole roast duck.

The striking space features limed plaster walls and serpent-shaped velvet banquettes in shades of Malachite green, lit by Murano glass chandeliers overhead. The Billiards’ Private Dining Room provides the ideal setting for more intimate celebrations.

The on-target earning potential for this role is £59,277 per annum, based on a 40-hour contract, comprising a base salary of £47,277 per annum, plus a qualified estimate of £12,000 in gratuities and service charge*. Please note this is a projected salary and OTE.
