Job summary

The Celtic Collection is seeking an experienced Sous Chef for Tŷ Hotel Milford Waterfront in Milford Haven. You will lead the kitchen in partnership with the Head Chef, ensuring top-quality dishes, strong stock control and outstanding guest experience.

Join a vibrant team at Pembrokeshire's waterfront hotel, with a salary of £14.18 per hour plus service charge and fantastic benefits. A recognised chef qualification and 3+ years’ experience are required.

Qualifications

• 3 years’ experience in a quality hotel or restaurant environment.
• NVQ Level 3 or equivalent chef qualification.
• Knowledge of menu costing and kitchen financial controls.
• Strong knowledge of food safety and HACCP.
• Food Hygiene Level 2 or higher.
• Able to lead and develop others.
• Thrives in a fast-paced environment and stays calm under pressure.
• Energetic, passionate and creative in the kitchen.

Responsibilities

• Work closely with Head Chef to run the kitchen day-to-day.
• Lead the kitchen team during busy services.
• Deliver high-quality food and presentation consistently.
• Order and manage stock effectively.
• Monitor food costs and support menu planning.
• Ensure food safety and HACCP standards.
• Reduce waste and promote sustainable kitchen practices.
• Collaborate with restaurant team for seamless guest experience.
• Coach, motivate and develop team members.
