Established in 1997, Taiko has been a pioneer in the UK sushi and Food To Go industry, supplying major retailers like Waitrose, Tesco, and Sainsbury’s. Over 25 years, Taiko has launched more first-to-market sushi and Food to Go products than any other UK manufacturer.

The role of the Specification Technologist involves ensuring the legal compliance and safety of products and packaging by preparing, maintaining, and managing specifications for raw materials, finished products, packaging, labels, artwork, and related documents. The position reports to the Specification Manager.

Key Responsibilities:

• Create, manage, and maintain specifications for all products, ingredients, raw materials, and packaging used by Taiko.
• Ensure the accuracy and legality of all documentation.
• Manage customer-specific websites and databases, including policy updates and customer questionnaires.
• Facilitate packaging artwork and label creation, ensuring legality and accuracy.
• Maintain approved label databases and support finished product labelling operations.
• Collaborate with NPD technologists on new product development projects.
• Conduct supplier risk assessments, approve suppliers, and maintain relevant registers.
• Perform ingredient and packaging risk assessments and maintain related registers.
• Support allergen management and HACCP systems, ensuring compliance with BRC standards.
• Ensure annual traceability of seafood, meat, and packaging suppliers.

Administrative Responsibilities:

• Support principal responsibilities and company objectives as needed.
