Job summary

The Castle Inn, Castle Combe, part of The Manor House estate and Exclusive Collection, invites a passionate Sous Chef to join a quality kitchen. You will lead with the Executive and Head Chefs, drive standards and mentor junior team members to deliver exceptional dining experiences for guests.

Qualifications

• Previous experience as a Sous Chef or senior chef role in a quality hospitality setting.
• Ability to lead during service and coordinate a busy kitchen.
• Strong culinary skills with high standards of quality and presentation.
• Experience coaching and developing junior kitchen staff.
• Sound understanding of kitchen operations, hygiene and compliance requirements.

Responsibilities

• Support Executive and Head Chef in daily kitchen operations.
• Coordinate brigade during service to ensure high standards.
• Run the kitchen in absence of senior chefs.
• Coach and develop Chef de Parties and junior cooks.
• Ensure compliance with food safety, allergen and health & safety rules.
• Assist with menu development and food presentation improvements.
• Assist with ordering, stock control and waste reduction.
• Maintain consistency and portion control across sections.
• Support labour planning and kitchen organisation.
• Foster a positive, development-focused kitchen culture.
