The Sous Chef at Castle Hotel, Windsor reports to the Head Chef and Senior Sous Chef to uphold exceptional food quality and top-tier kitchen standards. This hands-on leadership role oversees daily operations, leads service, and mentors the brigade to ensure consistency and efficiency across all stations.

Ideal candidates bring experience in high‑quality, fast‑paced kitchens, strong hygiene knowledge and a collaborative leadership style with an emphasis on coaching junior chefs.

Qualifications

• Hands-on leadership to deliver high kitchen standards.
• Strong knowledge of food hygiene, HACCP, and stock control.
• Experience supervising busy service periods and developing a brigade.
• Excellent organisational and communication skills.
• Flexible availability including evenings, weekends and holidays.
