University Arms, Cambridge, is seeking a Sous Chef to lead kitchen operations, ensuring top-tier quality and efficient service. You will manage junior chefs, oversee stock and cost controls, and uphold strict food safety standards in a high-end setting.

Experience in Four/Five-Star establishments and strong English communication are essential. The role requires flexibility for various shifts, including weekends and bank holidays, at Parker's Tavern in Cambridge.

Formación

• Experience as a Sous Chef in Four/Five-Star or high-end restaurant.
• Strong knowledge of cooking methods and kitchen practices.
• Team leadership and mentoring abilities.
• Competent level of English (spoken and written).
• Flexible work schedule including weekends and holidays.

Responsabilidades

• Lead the kitchen in absence of Head Chef & Exec Sous Chef; ensure smooth service and consistent quality.
• Train, mentor and motivate junior chefs; lead by example.
• Manage stock control, ordering, waste reduction and cost efficiencies.
• Uphold food safety, hygiene and allergen standards.
• Ensure high standards of presentation, portion control and taste.
• Foster a positive, respectful kitchen culture.
• Rectify hazardous situations and report major concerns to Head Chef.
• Supervise cleanliness and maintain standards of the kitchen.
• Ensure quality and standards for all dishes.
