Job summary

Meldrum House Hotel in Inverurie, Scotland, is seeking an experienced Sous Chef to lead our brigade with passion and a coaching approach. You’ll contribute to a high standard of dishes in both the main kitchen and banqueting kitchen, supporting the Executive Head Chef and ensuring consistency across services.

You’ll bring proven Sous Chef experience in a hotel or restaurant environment, show leadership, be mindful of food safety, and help develop menus while training and mentoring junior cooks.

Qualifications

• Demonstrate previous experience at Sous Chef level.
• Demonstrate previous experience in a hotel or restaurant environment.
• Be self-aware and able to evaluate your own work.

Responsibilities

• Giving suggestions of improvement where you see fit, to the Executive Head Chef.
• Involvement in the creation of new menu ideas and concepts.
• The preparation, presentation and service of dishes for a variety of events or services.
• Supervision and coaching of the brigade and kitchen portering team.
• Gaining extensive knowledge of our menus and food offerings.
• Assisting the management team in the control of all food supplies and purchases coming in and out of the kitchen, using date labelling processes.
• Adhere to all food safety and health and safety guidelines.
