Location: Dakota Hotel, Newcastle

Overview: We are seeking a creative Chef with strong leadership skills to join our Kitchen Team as Sous Chef. Dakota Newcastle is a stylish, new hotel on the Quayside with 118 bedrooms, including 33 suites, and features such as a Bar & Grill, Champagne Room, Cigar Terrace, and an event space for up to 60 guests.

Interview Schedule: All interviews will be conducted during the week commencing 26th May 2025.

Contract and Pay: Salary is competitive and will be discussed at interview. The role is permanent, with a minimum of 45 hours per week, working any 5 days out of 7, including regular weekends.

Primary Responsibilities
  1. Supporting the Head Chef in running the Kitchen, including leading during busy services.
  2. Carrying out managerial duties such as interviews, appraisals, and performance management.
  3. Driving the kitchen's commercial performance by managing rotas, holidays, stock takes, and ordering, as well as writing costed menus aligned with desired GP.
  4. Preparing and cooking dishes according to specifications for various menus and services.
  5. Communicating effectively with kitchen and front of house teams and fostering a positive team environment.
  6. Training junior Chefs and apprentices, promoting ongoing improvement.
  7. Adhering to Health & Safety and Food Hygiene legislation, including writing HACCPs and maintaining audit standards.
  8. Continuously developing professional skills and knowledge.
