Fallow is seeking a Senior Sommelier to shape our wine program and elevate guest experience in a sustainability-driven restaurant in London. You will work with the Head Sommelier to bring depth of knowledge, creativity, and leadership to a dynamic team.

The role requires proven Sommelier experience, WSET Level 2 or equivalent, and a passion for wine, sustainability, and hospitality excellence.

Qualifications

• Proven experience as a Sommelier or Senior Sommelier in a high-quality restaurant.
• Confident in guest interaction and communication.
• Strong desire for professional development in wine and sustainability.

Responsibilities

• Provide expert guidance on wine and beverage pairings.
• Curate and maintain a diverse, sustainable wine list.
• Build relationships with suppliers to source distinctive wines.
• Lead service standards and wine knowledge; mentor junior staff.
• Manage stock levels, inventory, and cost control.
