Job summary

Skylark Hospitality in London is seeking a dynamic Head Sommelier to lead the beverage programme for an international fine-dining restaurant. You will curate wine pairings, train the FOH team, and engage guests with expert recommendations.

Qualifications

• 2+ years as head sommelier or beverage director in fine dining.
• CMS or WSET Level 3+ preferred.
• Deep knowledge of Bordeaux and Burgundy wines.
• Strong leadership and mentorship skills.

Responsibilities

• Curate and manage wine program with pairing focus for Japanese flavours.
• Train FOH team in wine and sake knowledge.
• Provide personalized guest recommendations and education.
• Manage vendor relationships, inventory, and costs.
• Collaborate with culinary team on seasonal pairings.
