We have an exciting opportunity to take the lead on a 5* multi-site management role.

Three sites, set within the 5* Montcalm Royal London House hotel in Finsbury Square. Aviary opened in 2016 and has built a reputation as a destination rooftop bar and restaurant for both corporate and leisure guests in London. As the main food and beverage outlet for the hotel, Aviary is open from breakfast to late evening, offering stunning views of the city. It features a 60-seater restaurant, a central bar, and a spacious terrace that hosts high-impact activations during summer and winter, with igloos ensuring year-round appeal. On the ground floor, Burdock is a café and bar providing a relaxing space for hotel guests and business meetings. In the evenings, it becomes a lively venue for local business events. Nearby, Long Arm Bar & Microbrewery offers a vibrant atmosphere with on-site brewed beers by an expert Head Brewer, providing a dynamic beer selection. All three sites will be managed by the successful candidate.

WHAT YOU'LL NEED

• Extensive experience in F&B operations, including breakfast service
• Ideally, over 1 year of experience in a 5* hotel with knowledge of interdepartmental relationships, including events
• Strong relationships with hotel management stakeholders
• Excellent organizational skills and a track record of maintaining high standards of service and achieving a 5* AA rating
• Experience in staff training and development
• Knowledge of FS and HS regulations and HR practices
• Understanding of financial aspects such as budgeting, forecasting, and profitability
• Ability to work independently and with the head office team
• Strong commercial awareness and analytical skills
