Job summary

Maki & Ramen is seeking an experienced Restaurant Assistant General Manager to lead the launch of a new site in the UK. You will oversee day-to-day operations, manage a large team, and drive exceptional guest service, while delivering strong commercial results during busy event periods.

You will build a high-performing culture, ensure health and safety compliance, and collaborate with arena stakeholders to maintain smooth service before, during and after events.

Qualifications

• High-volume operational management experience.
• Strong leadership and communication skills for large teams.
• Ability to interpret data like covers, average spend, labour %, wastage, forecasts.
• Flexible and resilient to schedule changes and peak periods.
• Commitment to premium guest experience under pressure.

Responsibilities

• Oversee all aspects of day-to-day operations at a high-traffic venue.
• Lead, develop and inspire a large, diverse team with high hospitality standards.
• Drive revenue, upselling, cost control and full P&L accountability.
• Ensure health, safety, licensing and food hygiene compliance.
• Coordinate with arena stakeholders to manage visitor surges and guest experience.
