Job summary

Fairmont St Andrews is seeking a Chef de Partie - Pizza Chef to lead the pizza section in La Cucina. You will craft high-quality pizzas, manage dough preparation, toppings and sauces, and work closely with the Sous Chef to ensure outstanding Italian dining experiences.

You’ll maintain rigorous hygiene and stock control while guiding junior team members and delivering consistent, chef‑level results during busy service periods.

Qualifications

• Previous experience as Chef de Partie or similar role in a professional kitchen.
• Experience preparing and cooking pizzas in a busy restaurant.
• Knowledge of pizza dough preparation, handling, proving and cooking.
• Understanding of Italian ingredients, flavours and cooking methods.
• Strong food hygiene, health and safety, and allergen management.
• Excellent organisational skills and ability to work under pressure.
• Positive attitude and passion for delivering great food.
• Ability to work independently while contributing to a team.

Responsibilities

• Take day-to-day responsibility for the pizza section and ensure pizzas meet high standards.
• Prepare and stretch dough, ensuring texture and portion sizes.
• Create fresh sauces, toppings and ingredients per recipes and quality standards.
• Manage service flow in the pizza area to maintain speed and quality.
• Maintain kitchen hygiene, safety and stock rotation.
• Supervise stock checks, prep and requisitions for service.
• Keep workstation clean, organized and well‑stocked at all times.
• Collaborate with Sous Chef and kitchen team for smooth service.
• Mentor junior chefs and share knowledge to uphold high standards.
• Report equipment faults or stock issues promptly.
