About the location:

Pastry Sous Chef – Maternity Cover (12-Month Fixed Term Contract)

Four Seasons Hotel London at Tower Bridge is looking for a passionate and talented Pastry Sous Chef to join our dynamic pastry team on a 12-month fixed-term basis to cover maternity leave.

This is an exciting opportunity to be part of a world-class culinary team, working in a luxury environment where creativity, precision, and innovation are at the heart of everything we do.

About the Role:

As Pastry Sous Chef, you will support and collaborate closely with the Head Pastry Chef to ensure the smooth and efficient operation of the pastry kitchen. You will take a lead role in daily operations, including planning, preparation, production, and presentation, while upholding the highest standards of quality and consistency.

What you will do:

  • Leading and mentoring the pastry team, ensuring a positive and productive working environment.

  • Overseeing the production of all pastry items, from afternoon tea and plated desserts to showpieces and bespoke event offerings.

  • Monitoring food costs, portion control, and ordering in line with budgetary requirements.

  • Upholding hygiene and cleanliness standards, in collaboration with the Chief Steward.

  • Deputizing in the absence of the Head Pastry Chef, taking full operational responsibility.

  • Continuously elevating the guest experience through innovative and beautifully crafted pastry offerings.

What You Bring:

  • Experience in a similar leadership role within a luxury hotel or Michelin-starred environment.

  • Expertise in classical and modern pastry techniques with an eye for detail and artistic presentation.

  • Strong leadership and organizational abilities, with a hands-on and supportive approach.

  • A deep passion for pastry and a commitment to delivering exceptional guest experiences.

  • Flexibility to work a variety of shifts, including early mornings, evenings, weekends, and holidays.

  • Excellent communication skills and a collaborative, team-oriented mindset.
