The Alfriston Hotel in East Sussex is seeking a highly professional Sous Chef to join our Kitchen team for the exciting opening of The Alfriston, part of the Signet Collection.

You will deputise in the Head Chef's absence, manage day-to-day kitchen operations, ensure quality and safety standards, and support the team with training. We offer a competitive starting salary or hourly rate, 28 days holiday including birthdays, Wagestream access, and a range of development opportunities.

Responsabilités

• Deputise in the Head Chef's absence.
• Ensure that all chefs are familiar with the day's requirements.
• Ensure that the necessary stocks are on hand at the right quality and quantity.
• Ensure that fair discipline is maintained.
• Ensure that all staff are treated fairly and with commonly accepted courtesy.
• Ensure that timetables, leave rosters and attendance registers are up-to-date.
• Ensure that all statutory, as well as company, hygiene regulations are being strictly adhered to and maintain records and logs.
• Monitor and maintain health & safety compliance standards to adhere to current legislation.
• Ensure that all maintenance problems are reported and followed up.
• Ensure that all communications between restaurant and kitchen run smoothly.
• Ensure that each cook receives the correct orders for the appropriate tables.
• Ensure that each dish leaving the kitchen is checked for quality, quantity, presentation and correct temperature.
• Ensure that regular on-the-job training is carried out so that subordinate staff perform their duties correctly.
• Attend seminars and training courses as and when directed.
• Support all chefs with recipe knowledge and assist in troubleshooting.
