Job summary

The Alfriston Hotel in East Sussex is seeking a professional Chef de Partie to join the opening kitchen team at this historic property within the Signet Collection. You will contribute to the high standards across The 1554 Brasserie and associated dining experiences.

As part of the opening team, you will ensure mise en place is prepared, stocks are managed, and dishes are plated to specification while mentoring junior staff and adapting to a dynamic, luxury hotel environment.

Responsibilities

• Ensure that all stocks are kept under optimum conditions.
• Ensure that all mise en place is always freshly prepared and on time.
• Ensure that all dishes are being prepared to the correct recipe and to the correct quantity.
• Ensure that all dishes reach the hot plate or pass correctly garnished, the correct portion and size.
• Ensure that his/her section is kept clean and tidy at all times.
• Ensure that junior cooks and trainees receive the right training and optimum guidance.
• Deputise in the Sous Chef's absence and take charge of the kitchen when directed to do so.
