Job summary

Alexander House Hotel & Utopia Spa in Turners Hill, East Grinstead, West Sussex, seeks a Head Pastry Chef to lead the pastry team in a 3 Rosette kitchen. You will oversee desserts, breads, and cakes for restaurants and events, working with a team of 5; with a strong emphasis on quality and fresh, in-house items.

You will manage ordering, menu design with the Executive Chef, and ensure GP% targets are met. The role offers a competitive salary (£40,000 p.a.) and a monthly service charge, plus

Qualifications

• Demonstrate flair and creativity to build on the successful afternoon tea menu.
• Hold the experience to manage the multi menu requirements and banqueting operation.
• Ability to control stocks efficiently and to produce quality menu items achieving GP%
• Quality experience in a fresh food environment
• The passion and drive to contribute to the future success of the kitchen brigade who continue to develop award winning dishes.

Responsibilities

• Lead the pastry section with the support of 2 CDPs and 2 Commis Chefs in a 3 Rosette kitchen.
• Order and stock control for pastry operations.
• Design menus with the Executive Chef for afternoon tea, restaurant and banqueting.
• Produce plated desserts for all menus to 2 & 3 Rosette standard and supervise the pastry team.
