Alexander House Hotel & Utopia Spa is seeking a Head Pastry Chef to lead a talented pastry team in a 3 Rosette kitchen. The role involves creating desserts, breads and cakes in-house for fine dining and banqueting, including afternoon tea, with support from 2 Chef de Parties and 2 Commis Chefs.

You will design menus with the Executive Chef, ensure 3 Rosette quality, and drive stock control and GP performance across the pastry operation.

Qualifications

• Experience as Head Pastry Chef in a quality environment.
• Ability to produce plated desserts to 3 Rosette standard.
• Experience managing pastry team and banqueting operation.
• Stock control and GP attainment experience.

Responsabilités

• Lead the pastry section with support from 2 Chef de Parties and 2 Commis Chefs in a 3 Rosette kitchen.
• Create all pastries, desserts, breads and afternoon tea items in-house for restaurants and banqueting.
• Supervise pastry team to ensure consistent high standards across menus.
• Control stock and design menus with Executive Chef for afternoon tea, restaurant and banqueting.
