Job summary

Perle Hotels are seeking an accomplished Head Chef to lead the kitchen at Chargrill, our signature restaurant at Marmalade Hotel in Portree. This is a career-defining role for a chef who leads with intent and cooks with conviction.

You'll champion Scotland's produce, manage a high-performing brigade, and ensure service is seamless in a contemporary steakhouse setting on the Isle of Skye. Salary: £45,000 per annum with a 5% performance bonus, subsidised accommodation, 28 days leave, pension, and

Qualifications

• Proven experience as Head Chef or Senior Sous Chef in a high-quality kitchen.
• Creative, hands-on leader balancing artistry with commercial know-how.
• Strong understanding of GP margins, menu pricing and cost control.
• Excellent organisational and communication skills across the team.
• A deep respect for Scottish produce and steakhouse cooking.

Responsibilities

• Lead and develop a high-performing kitchen brigade.
• Design menus that celebrate local, seasonal produce with bold flavours.
• Maintain GP margins through menu engineering and supplier negotiations.
• Oversee stock, ordering, and cost monitoring to control waste.
• Ensure food safety, HACCP compliance, and allergen management.
• Collaborate with GM and FOH to align kitchen operations with guest experience.
