Qualifications

• Proven experience as Head Chef or Senior Sous Chef in a high-quality, high-volume kitchen.
• Strong leadership with mentorship skills and the ability to inspire a brigade.
• Deep understanding of GP margins, menu pricing, and cost-control practices.
• Excellent organisation and communication from rota management to briefings.

Responsibilities

• Oversee kitchen operations from creative development to commercial performance.
• Lead, recruit, and inspire the brigade; design Highlands-inspired menus.
• Ensure services run smoothly, efficiently, and profitably.
