Job summary

Wagstaff Recruitment is seeking a Head Chef to lead the flagship Scottish restaurant, managing 15 chefs in a high-volume kitchen and developing menus to drive Rosette accreditation. This role offers progression to a major new Edinburgh opening.

The base salary is £40,000–£45,000, with a performance bonus up to £5,000, plus tronc up to £15,000 and total OTE to £65,000. Relocation support and a 4-on/3-off pattern are on offer.

Qualifications

• Proven experience as Head Chef or strong Senior Sous Chef ready to step up.
• High-volume, fresh-food background with strong leadership.
• Experience with Josper grill/open-fire cooking.
• Commercially aware with financial acumen.

Responsibilities

• Lead a brigade of 15 chefs in a fast-paced kitchen.
• Oversee all kitchen operations, menu development, and service delivery.
• Manage food GP, labour, and compliance targets.
• Develop seasonal menus with the Executive Chef.
• Drive Rosette accreditation progress.
• Mentor and develop the kitchen team.
• Collaborate with the Executive Chef and Operations team.
