Job summary

COREcruitment Ltd is seeking an experienced Head Chef to lead the flagship restaurant in Scotland. This high-volume, fast-paced role requires strong leadership, menu development, and a drive toward Rosette accreditation.

The Head Chef will manage 15 chefs, oversee all kitchen operations, and develop seasonal menus with support from the Executive Chef. A path to a major new opening in Edinburgh within 6–9 months is available.

Qualifications

• Proven experience as Head Chef or strong Senior Sous Chef ready to step up.
• High-volume, fresh food background.
• Experience with Josper grill / open-fire cooking.
• Strong leadership and team management skills.
• Commercially aware with good financial acumen.
• Creative with menu development.
• Experience in rosette-level or premium restaurant environment desirable.
• Open to relocation to Scotland (or already based in Scotland).

Responsibilities

• Lead a brigade of 15 chefs.
• Oversee all kitchen operations, menu development, and service delivery.
• Manage food GP, labour, and compliance targets.
• Develop and execute seasonal menus with support from the Executive Chef.
• Drive the restaurant towards Rosette accreditation.
• Mentor and develop the kitchen team.
• Work collaboratively with the Executive Chef and Operations team.
