Executive Sous Chef - Luxury Shipboard Culinary Lead

Job summary

Silversea is seeking an Executive Sous Chef to serve as the second-in-command of our shipboard culinary team, supporting the Executive Chef in daily galley operations and luxury 5-star dining delivery.

You will oversee menu execution, sanitation, inventory, and staff management, lead training, coordinate with the Restaurant Manager, Maitre d's, Hotel Stores and HR to ensure guest dietary needs are met and guest satisfaction remains exceptional.

Qualifications

• Valid STCW95 certification and fitness for sea duty.
• 7+ years in international 5-star establishment (1 year as Sous Chef).
• 2+ years as Sous Chef in Michelin Star or Relais & Châteaux environment.
• Expertise in European and International cuisines with strong knife skills.
• Strong knowledge of maritime Public Health regulations and labor standards (ILO/MLC).
• High integrity, organization, and problem-solving for luxury guest hospitality.

Responsibilities

• Assist the Executive Chef in daily galley management and ensure top-tier presentation.
• Monitor inventory, requisitions, and waste reduction; manage galley operations.
• Lead strict hygiene, sanitation guidelines, IPM, and temperature logging.
• Oversee line cook training, scheduling, evaluations, crew assignments.
• Coordinate with Restaurant Manager, Maitre d', and HR for seamless service.
