Job summary

Mallory Court Hotel & Spa in Leamington Spa seeks an Executive Chef to lead a multi-outlet kitchen, overseeing The Warwick, Sencha, and events. You will drive menu development, cost control, and staff leadership to deliver consistently high standards across a luxury country house hotel.

You will shape the kitchen culture, mentor a brigade, and collaborate with the General Manager to elevate the hotel's dining reputation regionally and nationally.

Qualifications

• Proven Executive or Head Chef experience within a luxury hotel operating at consistent 3 AA Rosette level.
• Strong people leadership with coaching, accountability and respect.
• Ability to inspire high standards without ego, developing talented chefs who are proud to be part of your brigade.
• Strong commercial awareness, with proven experience managing GP, payroll, menu engineering and overall kitchen performance.
• Excellent kitchen management skills, embracing technology across purchasing, stock control, payroll, rostering, food safety, training and operational efficiency.
• Industry focus – outwardly looking with the ability to understand food trends and evolve with a modern approach to fine dining.
• The ambition to build on the success of The Warwick whilst shaping the future of food across the whole hotel.

Responsibilities

• Lead the food operation across Mallory Court Country House Hotel & Spa, including 3 AA Rosette restaurant The Warwick, Sencha Japanese fusion and events.
• Oversee development of Sencha while ensuring its concept remains fresh for spa guests and evening diners.
• Take overall responsibility for kitchen performance, from menu development and food costs to payroll and stock control.
• Lead the hotel leadership team, supporting food sales and local profile across outlets.
• Create a positive kitchen culture, develop the brigade, and ensure staff feel supported and proud of the food produced.
• Ensure every outlet delivers high standards and exceptional guest experiences.
