The Megaro Collection has welcomed its newest addition, Voyage with Adam Simmonds. Our Scandinavian Fine Dining restaurant, located in the heart of Kings Cross, opened its doors in January 2025. We invite patrons to explore the culinary prowess of our Chef Patron, Adam Simmonds. We are seeking an experienced and enthusiastic team member to join us on this exciting new journey, aiming to delight guests with adventurous flavors and exceptional hospitality.

Voyage with Adam Simmonds aims to provide light, airy, and minimalistic plates in an ambiance that reflects and enhances these sentiments. Our goal is to create an open and welcoming environment where guests can experience modern, fresh dishes inspired by land, sea, and atmosphere.

Chef Simmonds, recognized as one of the nation's top chefs with two Michelin stars, will craft plates inspired by architecture, art, and nature. Drawing on his experience working under Raymond Blanc at Le Manoir aux Quat’Saisons and techniques developed at Ynshir Hall, his first Michelin-starred restaurant, he seeks to honor traditional methods while embracing avant-garde culinary approaches. Attention to detail and innovation are essential at Voyage.

We are looking for an experienced Sous Chef with a Michelin pedigree and a minimum of 5 years in high-end establishments to join Chef Adam Simmonds on this new adventure.

The ideal Sous Chef will:

  • Have at least 1 year experience in a Michelin-starred kitchen or 4AA Rosette establishment
  • Be genuinely passionate about hospitality
  • Have a strong interest in food development and exploring culinary techniques
  • Possess a stable career background
  • Be flexible with working hours and tasks, supporting the Chef Patron as needed
  • Be experienced in managing health and food safety protocols
  • Be well-organized with a hardworking attitude
  • Maintain a positive, 'can-do' attitude
  • Have a good command of English
  • Be comfortable working in an open-space, guest-facing kitchen

The Sous Chef will:

  • Ensure the smooth and consistent operation of the back of house
  • Support the Chef Patron in menu development
  • Maintain high standards of food quality and production
  • Control stock purchasing, receipt, storage, and preparation, ensuring quality and safety
  • Manage food costs and optimize resources effectively
  • Ensure security of food, chemicals, and equipment in line with health and safety policies, including experience with Food Alert system (preferred but not essential)
  • Organize orders and staff rotas
  • Complete staff training and development in compliance with safety regulations
  • Work closely with the Chef Patron to ensure the culinary vision is realized
  • Adhere to grooming standards and maintain a professional appearance
