Luxury Hotel & Fine Dining Operation in Edinburgh is seeking an experienced Duty Manager to oversee day-to-day hotel operations and lead guest-focused service on shift. You will be a strong on-floor presence, guiding teams to deliver exceptional experiences across dining and events.

The role emphasizes hands-on leadership, overseeing service standards and ensuring smooth operations in a high-end environment. A passion for hospitality, wine and guest care is essential.

Formación

• Experience as Duty Manager, Assistant Manager or Restaurant Manager in luxury hotels or fine dining.

£49,200 OTE

We're recruiting for an experienced Duty Manager to join one of Scotland's most respected luxury hospitality businesses.

This is a hands-on management role within a high-end hotel and restaurant operation where guest experience, food, drink and service standards are everything. You'll be a visible presence on the floor, supporting the team, leading by example and ensuring every service runs smoothly from start to finish.

This isn't a role for someone who wants to sit behind a desk. We're looking for a manager who enjoys being part of the operation, building strong teams and creating memorable guest experiences.

The Role

Working closely with the senior management team, you'll take responsibility for the day-to-day operation of the hotel during your shifts, overseeing service standards, supporting departmental teams and responding to guest needs.

You'll be involved in:

• Leading and motivating front-of-house teams
• Delivering exceptional guest experiences
• Managing restaurant and event service operations
• Handling guest feedback and resolving issues professionally
• Supporting recruitment, training and team development
• Maintaining high standards of presentation throughout the property
• Coordinating with multiple departments to ensure smooth service delivery
• Supporting stock control, rotas and operational administration
• Ensuring compliance with health & safety and company procedures

About You

We're interested in speaking with candidates who have experience in:

• Duty Manager, Assistant Manager or Restaurant Manager positions
• Luxury hotels, boutique hotels or fine dining environments
• Leading teams in high-volume, high-standard operations
• Food and beverage-led hospitality businesses
• Hospitality Management to HND level desirable, but not essential

You’ll be confident managing people, making decisions under pressure and maintaining exceptional standards while delivering a warm and professional guest experience.

A genuine passion for hospitality, food and wine is essential.

• OTE package of approximately £49,200 per year
• Basic salary of £41,200 plus a substantial share of gratuities estimated at £8,000
