Job summary

Signature Group in Edinburgh is opening a new Scottish pub and dining room in the Old Town and is hiring Commis Chefs to join from the start. You’ll work with a passionate kitchen team, assisting with prep, mise en place and cooking to a high standard in a busy, supportive environment.

You’ll learn through hands-on guidance from senior chefs, with opportunities to explore Scottish produce, charcoal cooking and cross-section experience as the kitchen grows.

Qualifications

• Some kitchen experience is helpful, but attitude and a willingness to learn matter just as much.
• You genuinely enjoy food and want to improve your cooking.
• A team player who supports others and asks for help when needed.

Responsibilities

• Work with our chefs to prepare fresh ingredients and support the kitchen during service.
• Assist with mise en place and keep your section organised and ready.
• Learn to cook and present food to a high standard.
• Support the team during busy services and help wherever you're needed.
• Keep your section clean, tidy and well organised.
• Follow food safety and hygiene standards.
• Assist with stock rotation, deliveries and reducing food waste.
• Learn from senior chefs and rotate across sections.
• Help build the kitchen and team from the start.

The Role

We're opening a new Scottish pub and dining room in the heart of Edinburgh's Old Town, and we're looking for Commis Chefs to join us from the beginning.

Food is at the heart of what we're building. We’ll be working with great Scottish produce, charcoal cooking, fresh seafood and proper pub classics, all made with care and attention to detail.

As a Commis Chef, you'll have the chance to work alongside an experienced kitchen team, learn new skills and build your confidence in a busy, supportive environment. What You'll Be Doing

• Working alongside our chefs to prepare fresh ingredients and support the kitchen throughout service.
• Helping with mise en place and making sure your section is organised and ready to go.
• Learning how to cook and present food to a consistently high standard.
• Supporting the team during busy services and helping wherever you're needed.
• Keeping your section clean, tidy and well organised.
• Following food safety and hygiene standards and taking pride in doing things properly.
• Helping with stock rotation, deliveries and reducing food waste.
• Learning from the senior chefs and getting the opportunity to work across different sections.
• Being involved from the very beginning and helping us build the kitchen and team we want to be known for.

What We're Looking For

• Some professional kitchen experience is helpful, but it's not everything – attitude, enthusiasm and a willingness to learn matter just as much.
• Someone who genuinely enjoys food and wants to improve their cooking.
• A team player who is happy to support others and ask questions when they need help.
• Someone reliable, hardworking and proud of what they do.
• A positive attitude, even when service gets busy.
• An interest in Scottish produce, seasonal cooking and charcoal or open-fire cooking would be great, but training and support will be there.
• Most importantly, someone who wants to learn, grow and be part of something from the start.
