Job summary

The Signet Collection's The Alfriston in East Sussex is opening a new kitchen and recruiting a Chef de Partie to join the team. You will ensure mise en place is freshly prepared, dishes are cooked to recipe and quantity, and that your section is kept clean and well-staffed.

Qualifications

• Stock and mise en place management to ensure freshness.
• Ability to prepare dishes to recipe and quantity.
• Maintain hygiene and safety standards.

Responsibilities

• Ensure that all stocks are kept under optimum conditions.
• Ensure that all mise en place is always freshly prepared and on time.
• Ensure that all dishes are being prepared to the correct recipe and to the correct quantity.
• Ensure that all dishes reach the hot plate or pass correctly garnished, the correct portion and size, presented on the prescribed serving dish in the prescribed manner.
• Ensure that his/her section is kept clean and tidy at all times.
• Ensure that junior cooks and trainees receive the right training and optimum guidance.
• Deputise in the Sous Chef's absence and take charge of the kitchen when directed to do so.
• Attend training courses and seminars as and when required.
• Strive to study management subjects in preparation for future advancement.
• Ensure that all company rules and regulations relating to Hygiene, Health and Safety are being strictly adhered to and recorded correctly.
