Job summary

The Signet Collection is seeking an experienced Breakfast Chef to join The Alfriston in East Sussex. You will contribute to the breakfast service in a historic 41-bedroom hotel, participating in creating high-quality dishes and maintaining kitchen standards.

You will work early shifts, support the Sous/Head Chef, mentor junior staff, and uphold hygiene and safety. Enjoy development opportunities, staff discounts, and flexible scheduling within our luxury collection.

Qualifications

• Experience as a breakfast chef is required.
• Ability to prepare mise en place for breakfast service.
• Maintain stock levels and ensure freshness for breakfast offerings.
• Adhere to hygiene and safety standards in the kitchen.
• Support and mentor junior kitchen staff during shifts.

Responsibilities

• Work Sundays and Mondays from 6am - 11am.
• Maintain stocks and ensure freshness for breakfast service.
• Prepare mise en place for your section under guidance of Sous/Head Chef.
• Ensure dishes follow recipe cards with correct quantities to minimise waste.
• Present dishes correctly on prescribed serving dish and garnishes.
• Support commis chefs through training and mentoring.
• Communicate shortages to Sous/Head or Head Chef promptly.
• Maintain a professional, respectful kitchen environment for all staff.
• Engage in training programmes to advance culinary skills as required.
• Adhere to Hygiene, Health and Safety regulations and record properly.

Job description

We are looking for an experienced Breakfast Chef to join our Kitchen team at The Alfriston located in East Sussex.

Our 41-bedroom hotel which has been beautifully redesigned dates to the 14th century and is tucked away in the storybook village of Alfriston where the rolling South Downs meet the winding Cuckmere River.

You will:

• Work Sundays and Mondays from 6am - 11am.
• Maintain our stocks, ensuring all remain in the best condition for breakfast service.
• Prepare all relevant mise en place for your section, under the guidance of the Sous/Head Chef.
• Ensure that all dishes are being prepared against our recipe cards, whilst ensuring the correct quantities are used to minimise waste.
• Ensure that all dishes reach the hot plate or pass correctly garnished, the correct portion and size, presented on the prescribed serving dish in the prescribed manner.
• Support all commis chefs, ensuring they are nurtured and supported through their training programme, through ongoing mentoring.
• Communicate any anticipated shortages are communicated promptly to the Sous or Head chef.
• Maintain a professional and supportive work environment, ensuring all Chefs are respected regardless of their level or background.
• Engage with relevant training programmes to advance your culinary skills, as and when required.
• Ensure that all company rules and regulations relating to Hygiene, Health and Safety are being strictly adhered to and recorded correctly.
