The Signet Collection's The Alfriston in East Sussex is opening its kitchen and seeks a professional Chef de Partie to join the team. You will ensure stock control, Mise en place, and consistent dish quality in a luxury setting, contributing to a high-end guest experience.

Responsibilities

• Ensure that stocks are kept under optimum conditions.
• Ensure mise en place is freshly prepared and on time.
• Ensure dishes are prepared to the correct recipe and quantity.
• Ensure dishes are plated and garnished as prescribed.
• Keep the section clean and tidy.
• Train and guide junior cooks and trainees.
• Notify shortages promptly to Sous Chef/Head Chef.
• No horseplay; treat staff with fairness and courtesy.
• Deputise in Sous Chef's absence and lead kitchen as directed.
• Attend training courses and sem inars as required.
• Study management subjects for future advancement.
• Adhere to Hygiene, Health and Safety regulations.
