Job summary

Hamilton Princess & Beach Club, Bermuda's luxury urban resort, invites an experienced Banquet Chef to lead high-profile events and daily kitchen operations. You will manage menus, costings, production lists, and photography of presentations, while maintaining top-tier quality and service.

Reporting to the Executive Chef, you will coach a diverse team, uphold health and safety standards, and drive labour cost efficiency in a fast-paced, multicountry hospitality environment.

Qualifications

• Documented culinary training and certification (Red Seal or international equivalent).
• 3–5 years banqueting chef experience in luxury hotel or high-end restaurant environments.
• At least 2 years international experience preferred.
• Proven ability to maintain the highest standards of food presentation.
• Ability to work efficiently in a demanding, fast-paced, multicultural environment.
• Creative and energetic with excellent interpersonal and communication skills.

• Consistently offer professional, engaging and proactive guest service while supporting fellow colleagues.
• Demonstrate Fairmont core values in all interactions.
• Lead, coach and manage all aspects of team members’ performance towards exceptional guest service and engagement results.
• Assist with menu development, costing, recipes, production lists, and photography of food presentations as required.
• Order food and manage inventories to maximize quality and minimize food cost.
• Maintain quality control from concept to presentation and make necessary adjustments.
• Schedule and manage staff to support service level commitments and labour cost goals.
• Maintain good working relationships with hotel departments to ensure an exceptional guest experience.
• Ensure awareness of industry trends and continually develop professional knowledge and abilities.
