Job summary

Hiddenwell is seeking an experienced Assistant Restaurant Manager to lead the Brasserie at Ardencote Hotel & Spa, Warwickshire. You will support the Restaurant Manager and develop the restaurant team to deliver memorable guest experiences.

In this hands-on leadership role, you’ll manage service, coaching, and daily operations, ensuring high standards, food hygiene, and guest satisfaction while contributing to budgets and commercial targets.

Qualifications

• Must have previous supervisory or management experience in a restaurant, hotel or high-quality hospitality environment.
• Excellent understanding of restaurant operations and service standards.
• Genuine passion for delivering exceptional guest experiences.
• Experience leading, motivating and developing a team.
• Excellent communication and interpersonal skills.
• Abilities to handle guest feedback and resolve issues.
• Strong commercial awareness including sales, payroll and cost control.
• Excellent organisational skills and calmness during busy services.
• Knowledge of food hygiene, allergens and health & safety requirements.

Responsibilities

• Lead the restaurant team during service and maintain consistently high standards.
• Create a warm, welcoming and memorable experience for every guest.
• Coach, motivate and develop the team through regular feedback, coaching and training.
• Run effective pre-shift briefings covering VIP guests, special occasions, dietary requirements, menu updates and service priorities.
• Ensure the team has excellent knowledge of menus, beverages and wider hotel offerings.
• Handle guest feedback and complaints professionally and resolve issues effectively.
• Support recruitment, onboarding and ongoing development of new team members.
• Manage staffing levels and payroll in line with business needs.
• Identify opportunities to increase sales, upselling and restaurant performance.
• Support achievement of departmental budgets and commercial targets.
• Ensure SOPs and opening/closing procedures are followed.
• Maintain high standards of food hygiene, cleanliness, health & safety and allergen awareness.
