Job summary

MAI Sushi in Edinburgh is recruiting an Experienced Assistant Sushi Chef Manager to lead our team at the Marks & Spencer kiosk on Princes Street.

The role demands enthusiasm, initiative and the ability to work early shifts from 6am, while maintaining high standards of food safety, allergen handling and customer service.

Responsibilities

• Lead the team during Chef Manager absence while maintaining audit standards for food and health & safety compliance
• Ensure cleanliness and food safety on site to maintain a safe environment for customers and staff
• Prepare fresh ingredients by hand per shift (meat and raw fish)
• Accurate labeling and allergen compliance for each shift
• Be a skilled multitasker and available for early starts (6am)

And are able to:

• Be accountable forthe team in the Chef Managers absence, whilst maintaining audit standards for food and health & safety compliance while meeting EHO expectations
• Ensuring the team maintains a high standard of cleanliness and food safety on site to maintain a safe environment for our customers, our clients and ourselves
• Highly organised, with a focus on forward planning
• Prepare fresh ingredients by hand, including meat and raw fish products each shift
• Accurately labelling products ensuring lawful compliance around food safety and allergen compliance each shift.
• Be a skilled multitasker
• An early riser as shifts can start at 6am some days
• Learn new skills or improve skills already mastered
