Pennyhill Park, part of Exclusive Collection, hosts Latymer, a Michelin-starred and 5 AA Rosette dining venue in Bagshot, Surrey. We seek an Assistant Restaurant Manager to support the leadership of Latymer and deliver unforgettable dining experiences with passion, precision and hospitality.

You will collaborate with the Restaurant Manager to develop the team, ensure guest satisfaction from arrival to departure, and uphold the restaurant's exceptional standards in a luxury setting.

Key Responsibilities

As an Assistant Restaurant Manager, you will be a leader, mentor and ambassador for exceptional hospitality in our Michelin Star restaurant. Our Assistant Restaurant Manager will:

• Support the Restaurant Manager in the day-to-day operation of Latymer and the overall guest experience


• Lead and motivate the team during service, ensuring smooth operations and consistently high standards


• Build strong relationships with guests, confidently handling enquiries and resolving concerns professionally


• Assist with recruiting, training, coaching and developing team members


• Oversee reservations, table management and service preparation to maximise guest satisfaction


• Maintain exceptional standards of presentation, cleanliness and organisation throughout the restaurant


• Support stock management, ordering processes and waste control initiatives


• Ensure effective communication between the restaurant, kitchen and wider hotel teams


• Uphold food safety, allergen procedures and health and safety standards at all times

Person Specification

You’ll be a passionate, organised and inspiring hospitality professional who thrives in a luxury dining environment and takes pride in developing both people and guest experiences. As our Assistant Restaurant Manager you’ll bring:

• Previous experience in a restaurant supervisory or management position, ideally within a high-quality hospitality environment


• Strong leadership skills with the ability to motivate and guide a team during busy service periods


• Excellent communication and interpersonal skills with a natural ability to engage with guests


• A proactive, solutions-focused approach and the confidence to make decisions under pressure
