Job summary

InterContinental London Park Lane, part of the IHG Hotels & Resorts family, is seeking an Assistant Restaurant Manager for Theo Randall’s Cucina Italiana. This luxury role focuses on supporting a high‑calibre dining operation in Mayfair, delivering personalised service and developing a talented team.

You will lead service, coach staff, manage costs and collaborate with the culinary team to uphold Michelin‑style standards, while driving guest satisfaction and revenue.

Qualifications

• Minimum 3–5 years in luxury or fine dining environments.
• At least 2 years in a supervisory or Assistant Restaurant Manager role.
• Experience in a five‑star hotel or internationally recognised luxury brand.
• Strong leadership and people development skills.
• Excellent communication, organisation and problem‑solving abilities.
• Food safety certification is essential.
• WSET or similar wine qualification is desirable.
• Knowledge of Italian cuisine or language is advantageous.

Responsibilities

• Lead by example to deliver luxury service across all shifts.
• Support daily operation of the fine dining restaurant for a seamless service.
• Coach and develop the restaurant team, fostering excellence and teamwork.

What You'll Be Doing

As Assistant Restaurant Manager, you'll work closely with the Restaurant Manager to ensure every service is delivered flawlessly, creating memorable moments for every guest.

You will:

• Lead by example, delivering exceptional luxury service throughout every shift.
• Support the day-to-day operation of our fine dining restaurant, ensuring smooth and efficient service.
• Inspire, coach and develop the restaurant team, creating a culture of excellence, accountability and teamwork.
• Build genuine relationships with guests, recognising preferences and creating personalised dining experiences.
• Collaborate closely with the Chef Theo Randall, the culinary team and wider hotel colleagues to deliver seamless service.
• Maintain the highest standards of presentation, cleanliness and attention to detail.
• Support labour management, stock control, scheduling and cost efficiencies.
• Drive revenue through exceptional product knowledge, wine recommendations and premium upselling.
• Ensure full compliance with food safety, health & safety and luxury brand standards.
• Take ownership of the restaurant in the absence of the Restaurant Manager.

What We're Looking For

• You’ll be passionate about luxury hospitality and thrive in a fast-paced fine dining environment.

You’ll ideally have:

• A minimum of 3–5 years' experience within luxury or fine dining restaurants.
• At least 2 years' experience in a supervisory or Assistant Restaurant Manager position.
• Previous experience within a five-star hotel or internationally recognised luxury hospitality brand.
• Outstanding leadership and people development skills.
• A strong understanding of fine dining etiquette and luxury service standards.
• Excellent communication, organisation and problem-solving abilities.
• Commercial awareness with experience managing costs, labour and revenue performance.
• Food Safety certification (essential).
• WSET or equivalent wine qualification (desirable).
• Knowledge of Italian food and language (desirable).
