Job summary

South Lodge, part of Exclusive Collection, invites applications for an Assistant Restaurant & Bar Manager to support day-to-day operations of the Restaurant & Bar. You will work closely with the Restaurant & Bar Manager to inspire the team and uphold service standards while delivering exceptional food, drink and hospitality.

Qualifications

• Previous supervisory or management experience within a quality restaurant, bar or hotel environment.
• Passion for delivering exceptional food and beverage service.
• Strong leadership and team development skills.
• Excellent communication and organisational abilities.
• A hands-on approach with the confidence to lead from the floor.
• Commercial awareness and attention to detail.
• Flexible approach to working shifts, including evenings, weekends and bank holidays.

Responsibilities

• Support the day-to-day management of the Restaurant & Bar, ensuring exceptional service at all times.
• Lead, motivate and develop the team to deliver outstanding guest experiences.
• Take an active role in service, leading by example during busy periods.
• Assist with team training, rota planning and performance development.
• Work closely with the kitchen and wider hotel teams to ensure seamless service delivery.
• Support stock control, ordering and cost management within the department.
• Ensure compliance with food safety, licensing and health & safety standards.
• Maintain the highest standards of presentation, cleanliness and operational excellence.
