Compass Group UK & Ireland Defence recruitment is seeking an ambitious Apprentice Chef to join our Ashby De Launde team. You’ll learn hands-on in a busy kitchen, training toward the L2 Commis Chef or L3 Chef de Partie qualifications and gaining core cooking skills.

You’ll complete your Level 2 NVQ in Professional Cookery (or equivalent) or Level 2 Food Hygiene, while working 37 hours per week on a full-time basis. Expect structured training, career progression, and a supportive environment.

Qualifications

• Hold a Level 2 NVQ Diploma in Professional Cookery (or equivalent).
• Hold a Level 2 Food Hygiene Certificate.
• Be eager to learn and develop culinary skills.
• Hold a full UK driving licence and have access to own vehicle.

Responsibilities

• Prepare, cook, and present dishes to company standards and portion specifications.
• Ensure food is stored correctly to maintain quality and minimise waste.
• Assist with processing food orders and stock management.
• Receive, check, and store deliveries appropriately.
• Maintain high standards of cleanliness across kitchen and food preparation areas.
• Operate kitchen machinery and equipment safely and correctly.
• Adhere to all food safety, food hygiene, and health & safety procedures.
• Support the wider kitchen team with day-to-day operations and service delivery.
• Complete food safety checks and comply with food information regulations.

Job description

As either an apprentice Commis Chef or Chef de Partie, you will work alongside a passionate and supportive team, gaining hands-on experience while developing your skills through structured training. On completion of the apprenticeship, you will either achieve the L2 Commis Chef qualification or the L3 Chef de Partie qualification taking the next steps in your hospitality career.

• Undertake additional duties as required to support an efficient catering service., As part of the application process, you will be required to complete a short eligibility questionnaire and participate in a screening call. This enables us to assess your eligibility for apprenticeship funding and ensure compliance with:
• Department for Education (DfE) and Department for Work & Pensions (DWP) requirements;
• Apprenticeship funding assurance requirements; and
• Applicable audit requirements.

Following completion of the screening call, we will review the information you have provided against current apprenticeship funding rules and the requirements of the role to determine your eligibility for the apprenticeship programme. This is a mandatory stage of the application process and helps ensure that applicants meet the criteria required to undertake an apprenticeship.
